Funfetti Snickerdoodles Cookies | Easy + Kid Approved

These Funfetti Snickerdoodles are a staple in our house — mostly because my boys love making them with me. Someone is always in charge of pouring sprinkles (very important job), and they take the rolling-and-coating step extremely seriously.
They’re soft, cozy, and a little party all at once — which is basically our kitchen in cookie form.

Ingredients you’ll need:
Here’s what you’ll need to make about 24 cookies :
1/2 cup (1 stick) unsalted butter, softened
1/2 cup granulated sugar
1/3 cup light brown sugar (packed)
1 large egg
1 1/2 tsp vanilla extract
1 1/2 cups all-purpose flour
1 tsp cream of tartar
1/2 tsp baking soda
1/2 tsp salt
2/3 cup rainbow sprinkles
1/2 cup granulated sugar for rolling
You can use whatever sprinkles you’d like for the recipe. My boys are always looking to add something new. If you’re really getting adventurous you can swap the vanilla extract for almond and cut it down to just 1 tsp.
The step by step:
1.Prep
Heat oven to 350°F
Line 2 baking sheets with parchment
2.Mix the dough
In a bowl, beat butter + both sugars until fluffy (about 1–2 minutes)
Mix in egg + vanilla
Add flour, cream of tartar, baking soda, and salt
Mix just until no dry flour remains
Gently fold in sprinkles
3.Roll
Stir together the cinnamon-sugar in a small bowl
Scoop dough (about 1 1/2 Tbsp each), roll into balls
Roll each ball in the cinnamon-sugar
4. Bake
Place cookies 2 inches apart
Bake 9–11 minutes until edges are set and centers look slightly underdone
5. Cool
Let cookies cool on the pan 5 minutes
Move to a rack to finish cooling
Quick tips:
✨For thicker cookies: chill dough 15–30 minutes if your kitchen is warm
✨Don’t overbake — snickerdoodles should look a little soft in the center when they come out
